Age is of no importance unless you are a Cheese! Aged to Perfection is a fabulous collection of our aged cheeses. For someone who likes robust flavorful cheeses.
Blanca Bianca - Soft textured Raw Milk Cheese with a pungent edible rind that is bathed daily with white wine during its maturing period (Aged over 60 days)
Montasio Festivo - Dense Goat's Milk Montasio coated with mild, smokey flavored ancho chile paste to form a red rind. Aged for two months minimum.
Deep Ellum Blue - Earthy and complex with a moldy blue exterior. Robust flavor and creamy, supple texture. "A blue cheese for people who don't like blue cheese." Aged at least 6 weeks (1/2 lb)
Rosemary Montasio - Mellow and flavorful with a lingering hint of rosemary, and a firm texture (1/2 lb)
